Our Earthy Flavour Standard helps train professional tasters to recognise and scale the intensity of ethyl fenchol’s character in food and beverages. Ethyl fenchol is an off-flavour with a musty, dried grass and earthy damp soil character, like damp soil or freshly dug soil. This earthy taste/taint is imparted to beverages due to poor packaging, raw materials, or finished product storage conditions.

Cause of the Earthy Flavour
This earth-flavour taint is imparted to beverages due to poor storage conditions of packaging, raw materials, or finished products.

2-ethyl fenchol is created by bacteria within water and damp soil.

2-ethyl fenchol can migrate through packaging during storage in damp, dark areas. Dirty or insufficiently cleaned equipment can also contaminate raw water, which is then passed onto the final product.

In sensory analysis, FlavorActiV’s Earthy flavour standard is a sensory reference often used to train taste panels and quality control teams to identify earthy notes in food, beverages, and other products. Earthy notes can be either desirable or off-putting, depending on the context; for instance, they may enhance the complexity of wine but be considered a defect in drinking water.

Industry leading packaging and shelf-life

FlavorActiV flavour standards are blister packaged, which extends shelf-life and protects capsules from potential contamination. The average shelf-life of FlavorActiV flavour standards is 18 months to 4 years, depending on the flavour compounds.

We will never ship in pots or plastic packaging, here’s why…

Blister packaging protects capsules from the environment until they are ready for use. Blister packaging greatly reduces the amount of headspace for possible flavour escape. As each capsule individually blister packaged, making use of one capsule still leaves all others protected. FlavorActiV Flavour Standard packaging is 100% recyclable, as opposed to polypropylene which is not widely recycled.

Pots are semi-porous, they allow molecules to pass through and flavour to be lost, their significant headspace also adds to substantial flavour escape as a gas, even when using just one capsule all those remaining in the pot are exposed.
