The alkaline (sodium bicarbonate) flavour standard is used to assess the potency of the sodium bicarbonate character. Sodium bicarbonate appears as an odourless, white, crystalline powder or lump.
The alkaline (sodium bicarbonate) flavour is caused in beverages due to chemical cleaning products increasing pH to alkaline levels. The increase in alkalinity will alter the beverage’s flavour profile and add a detergent-like taint. The flavour profile can be specific to the beverage it occurs in.

Cause of Alkaline Flavour
Alkaline flavour is caused in beverages due to chemical cleaning products increasing pH to alkaline levels. The increase in alkalinity will alter the flavour profile of the beverage and add a detergent-like taint. The flavour profile can be specific to the beverage it occurs in.
Chemical cleaning product interaction occurs due to poor Clean In Process (CIP) systems. Poor rinsing of equipment and pipework before product and raw materials are introduced. Taints are then pulled through into the final product.
Product dispensing that haven’t been properly cleaned can also cause this taint as the product is provided to consumers and is a major problem when fountain systems are delivering products in bars, public houses and restaurants.
Poor CIP systems can impart several different taints and flavours – phenol compounds and bleach-like flavours can also be introduced depending on the cleaning chemicals used.

Industry leading packaging and shelf-life
FlavorActiV flavour standards are blister packaged, which extends shelf-life and protects capsules from potential contamination. The average shelf-life of FlavorActiV flavour standards is 18 months to 4 years, depending on the flavour compounds.
We will never ship in pots or plastic packaging, here’s why…
Blister packaging protects capsules from the environment until they are ready for use. Blister packaging greatly reduces the amount of headspace for possible flavour escape. As each capsule individually blister packaged, making use of one capsule still leaves all others protected. FlavorActiV Flavour Standard packaging is 100% recyclable, as opposed to polypropylene which is not widely recycled.
Pots are semi-porous, they allow molecules to pass through and flavour to be lost, their significant headspace also adds to substantial flavour escape as a gas, even when using just one capsule all those remaining in the pot are exposed.
