The ethyl acetate flavour occurs as part of the fermentation process by yeasts. Commonly ethyl acetate is seen in beer and it has a normal flavour. However, high concentrations can cause an off-flavour.

Cause of Ethyl Acetate Flavour
Ethyl acetate flavour occurs in alcoholic beverages as part of yeast fermentation.Commonly seen in beer it is a normal flavour. When this flavour increases within the product it can be seen as an off-flavour. Rogue wild yeasts can impart this flavour during fermentation. Ethyl Acetate is very common in wine due to the high amounts of acetic acid within this product.
For non-alcoholic beverages, ethyl acetate flavour can be introduced via other processes—via decaffeination of coffee beans and tea leaves. Ethyl Acetate is also a general flavouring – that could end up being carried over during bottling changeover and cleaning processes.

Ethyl Acetate has a very high sensory detection threshold – we suggest reducing the amount of beer this product is used to 500 ml if your panel is having trouble detecting it.

Industry leading packaging and shelf-life
FlavorActiV flavour standards are blister packaged, which extends shelf-life and protects capsules from potential contamination. The average shelf-life of FlavorActiV flavour standards is 18 months to 4 years, depending on the flavour compounds.
We will never ship in pots or plastic packaging, here’s why…
Blister packaging protects capsules from the environment until they are ready for use. Blister packaging greatly reduces the amount of headspace for possible flavour escape. As each capsule individually blister packaged, making use of one capsule still leaves all others protected. FlavorActiV Flavour Standard packaging is 100% recyclable, as opposed to polypropylene which is not widely recycled.
Pots are semi-porous, they allow molecules to pass through and flavour to be lost, their significant headspace also adds to substantial flavour escape as a gas, even when using just one capsule all those remaining in the pot are exposed.
